JFK's Waffles (from Senate days)

Ingredients:

  • 1/2 cup butter
  • 1 tbsp sugar
  • 1 tsp salt
  • 2 egg yolks
  • 1 scant cup milk or buttermilk
  • 1 heaping cup sifted flour
  • 2 stiffly beaten egg whites
  • 4 tsps baking powder

Preparation:

  • Cream sugar and butter, add egg yolks. Beat.
  • Add flour and milk alternately. When ready to bake, fold in egg whites, and add baking powder.
  • Mixture should be thick and fluffy. Bake in waffle iron and serve with maple syrup and melted butter.

Cinnamon Toast

Ingredients:

  • Fresh (homemade) white bread
  • Ground cinnamon
  • Light or dark brown sugar
  • Butter

Preparation:

  • Cut slices of bread in half, making two rectangles.
  • Toast one side in the oven broiler. Remove.
  • Spread the other side with softened butter and sprinkle thick with sugar mixed with the cinnamon (1 tsp. cinnamon to 1/2 of sugar.
  • Set topping side up in the broiler until topping begins to bubble. Serve at once.

Eggs Benedict (Rene Verdon)

Ingredients:

  • Water
  • 1/2 tsp salt
  • Pepper to taste
  • 1/2 tbsp of vinegar
  • 1 to 2 eggs per person

Preparation:

  • Heat water to simmering in a shallow pan; add salt, pepper and vinegar.
  • Carefully break egg in a cup and gently slip it into the water.
  • Cook eggs below boiling point for about 5 minutes or until white is firm and a film has formed over the yolk.
  • Remove egg with a skimmer and serve.

Kennedy White House Daiquiri Recipe

  • 2 parts rum
  • 2 parts frozen limeade
  • 1 part fresh lime juice
  • Add a few drops of Falernum (artificial sweetener like Sweet n' Low) to taste

Red Gate Farm Iced Tea Recipe (Marta Sgubin)

  • Put either 6 tea bags or 6 tablespoons loose tea in a teaball or muslin in a deep mixing bowl with a nice bunch of fresh mint. Pour 6 cups boiling water over the tea and mint, cover and let steep for ten minutes. The tea should be strong because the melting ice will weaken it.
  • Add 2/3 cup of orange juice and 1/2 cup of lime juice, then pour through a strainer into a pitcher. Cover the pitcher with foil and refrigerate. Jackie liked her tea with no sugar but for those who want it to be sweeter, add 1/2 cup of sugar syrup to the glass when it's poured onto the ice.
  • The sugar syrup is created by bringing 1 cup of water and 1 cup sugar to a boil together. When cool, store in a screw top jar in the refrigerator.
